The wellness food space keeps generating new opportunity because consumer needs don't stay solved. Solve gut health convincingly, and the market immediately asks for gut health plus energy, or gut health plus sleep. Demand doesn't plateau, it compounds.

That's partly because "wellness" itself isn't static — it tracks whatever people are currently worried about or chasing. Immunity had its moment. Stress and cognitive focus are having theirs now. The next concern is already forming, and food is usually one of the first categories to respond to it.

Opportunity also opens up in ways that have nothing to do with new ingredients or science. A shift in how people shop, a format becoming viable at scale, a market reaching the income level to afford something it couldn't before — these create space just as often as a new discovery does.

The practical implication: being "too late" is rarely the real risk in this space. The market isn't a fixed pie getting carved up — it's still growing as fast as people keep finding new things they want food to do for them.
